Chapli Kebab (Winner of a Cooking Contest )

The Indian subcontinent along with the middle eastern world has been the hub of Kebabs since ages. Since ages Persian and Iranian travelers and rulers have influenced the Indian cuisine introducing dishes like kebabs and biriyanis. Chapli is one of those kebabs which is loved in the streets of Pakistan and India and has derived its name from Chaprikh which means flat in Pashto. Rumor also has it that it is named after slippers which is called Chappal in hindi.. 😊 Either ways it’s a very tasty dish and a very easy one to make and you all should try this at home.

I had submitted this recipe for a cooking contest and it came out as the winner, so double the reason for you all to try it now.

Cuisine – Indian , Pakistani

​Prep: 10 mins.
Cooking: 15 mins

Ingredients:
1 Pound ground chicken(minced/chicken keema)
1 Spoon of coriander seeds.
1 Spoon of fennel seeds.
1 Spoon of Kashmiri Red Chili or Deghi Mirch. (Normal chili powder/cayenne will also work)
1 Spoon of Cumin powder
1.5 Spoon of Garam masala. (All spice)
Salt to taste.
Some dry red chili flakes
5 spoons of oil.
Finely chopped mint leaves ¼ of a small bowl.
Some baking soda. (Optional)

Optional Fajita
½ Onion cut into long thin slices.
½ Green bell pepper cut into long thin slices.

Optional Raita/Dip
Cilantro – ½ bowl.
Mint – ½ bowl.
½ cup Curd.
½ spoon cumin seeds.

RECIPE:
Kebabs
1. Take the ground chicken and use a spoon to mix it up before adding the spice. It should look like a paste after this step.
2. Crush the coriander seeds with your hand and add it to the bowl of chicken.
3. Add the fennel seeds and mix them together.
4. Now add the Kashmiri Red Chili , Cumin, Garam masala, Salt, Red chili flakes, oil and mint and mix them together.
5. Check the texture and add a bit of baking soda to hold the kebab together.
6. Take a spoon full of this mix and use your hands to make a ball and then flatten them into a round shaped kebab. Refer to the video for more details.
7. Take a flat pan , pour some oil and start heating it.
8. Now place the kebabs carefully in the Pan and start shallow frying them in medium flame.
9. Use a flat spoon to press them while cooking, this will flatten them more and also squeeze out extra oil from the kebab.
10. Turn them around and make sure both sides are cooked equally. You can cook each side for 6-7 minutes and it should be done.

Fajita - (Optional)
1. In another small pan, add sprinkle some oil and add cut onions and green bell peppers on it.
2. Dry fry/roast them so that they get a little charred. Add some cumin powder and salt to taste.
3. Once done , take them out on a plate and serve the Kebabs on top of these.

Raita - (Optional)
1. Add some cilantro, mint , ½ cup of yogurt, ¼ cup of water , salt and cumin seeds in a blender and blend them together. This should serve as the Green raita or the Dip for the kebabs.

Serve them while they are hot with some Naans or Parathas.
