Chicken Changezi

The story begins 15 years back, I visited a restaurant with some friends and a friend of mine just jumped out of his chair seeing the menu telling us they have Chicken Changezi on the menu. He started going gaga about this dish from Delhi and all that, Changezi … hmmm… I thought it would be some Mongolian dish customized and indianized in some manner as the name of the dish was after Genghis Khan , yes he is referred to as or rather pronounced as Changez in the Indian subcontinent. But to my surprise it was completely opposite, it closely resembled Butter Chicken but was not the same, I asked my friend what’s different about it and he said not everyone does it the right way but you got to cook one item after the other to complete the dish.
It tasted absolutely fantastic and hence this is my version of the dish, it is a great dish to cook for a feast. I have taken the easy route and simplified it and so should you if you want to cook this dish, the masala’s prepared separately and hence you can cook it quickly if you can work in parallel.

Cuisine – Indian

Prep: 15-20 mins.
Cooking– 45 mins

Ingredients:
2 Onions cut into small.
1 Small bowl of Fresh chopped Ginger
2 Green chilis , sliced into half from the middle
3 spoons of Curd
10-12 cashewnuts
10-12 Almonds
1.5 tomatoes blended into a puree.
1 lb of Chicken.
Canola or Vegetable Oil.
Salt to taste
2½ bowl fresh Cilantro chopped small
Dried Fenugreek leaves.

Ground Spices -
3 pods of cardamom
4 cloves
1 inch long cinnamon stick
2 black cardamom (Badi Elaichi)
1 Star Anise
4 bay leaves
1 Tea Spoon Pepper Corn
2 Tea Spoon of Cumin Seeds.
2 Tea Spoons of Coriander seeds.

Spice Mix –
1 Tea Spoon of Coriander Powder
1 Tea Spoon of Chili Powder
2 Teaspoons of Garam masala

RECIPE:

All Spice powder –
1. Add all the ground spices in a Flat Pan.
2. Dry roast them for 2 minutes until they ate roasted and start giving the aroma.
3. Be careful and don’t over roast or burn them.
4. Grind them into a Dry Spice powder.

Spice Mix paste–
1. Take a bowl and add the spices listed in the “Spice Mix” section in the ingredients.
2. Add a little water and mix thoroughly to form a paste.

Onion Garlic Paste -
1. Pour 1 Table spoon of oil in a Pan , heat the oil and add the onions in the pan.
2. Add the ginger and saute for 5 minutes. Keep stirring them while sautéing.
3. Add the Green chilis
4. Saute for another 3 minutes , until they turn golden brown.
5. Add the mix into a blending jar and blend it to form a paste.

White Paste –
1. Add 3 spoons of Curd into a blending Jar
2. Add the cashewnuts and the almonds in the same Jar
3. Blend them into a white paste.

Changezi –
1. Pour some more oil into the same wok and start adding the chicken pieces in there.
2. Stir and cook for 5-7 minutes in medium heat.
3. Add the All Spice Powder prepared earlier
4. Stir , Mix and Cook for 5 minutes.
5. Now add the Spice Mix paste prepared earlier
6. Stir , Mix and Cook for 5 minutes.
7. Now add the Onion Garlic Paste into the wok.
8. Stir , Mix and Cook for 5 minutes.
9. Now add the tomato puree into the wok
10. Cook for 5 more minutes.
11. Add salt to taste.
12. Cover and cook for 7 more eminutes and let the chicken cook.
13. If the chicken looks cooked , add the white paste now .
14. Mix and cook for 5 more minutes.
15. Sprinkle some fresh cilantro
16. Sprinkle some Dried fenugreek (Kasturi methi) leaves in the wok.
17. Mix well, cook for 5 more minutes and your dish is ready
