Simple Chicken Soup (Shorba) for kids..!!

Rihaan was not well recently and one of my colleagues told me to give him some hot water with cloves and star anise. It seems this helps with cold and sore throat and is widely used in her native. Sandy generally prefers to feed Rihaan with chicken clear soup when he has cold. So, I combined the two ideas to create this simple soup. I added some veggies and some spices to develop some taste and thickness to the soup. When ready, it tasted like Shorba and hence the name. The sweetness from star anise is the star of this soup. It is also an instant pot recipe and makes our job super easy. I did not use any herbs today but some cilantro might help with the taste of this one as well. A bowl of this is so lovely and comforting, I think I am going to make more of it from now on.

Ingredient:
½ Onion chopped thin
1 Tomato chopped small
Some carrots
1 Zucchini chopped medium
Some corns
3 baby potatoes chopped small
3 cups of water
1 Teaspoon of coriander powder
2 Star anise
5 cloves
Salt to taste
1 lb boneless chicken thighs chopped small

RECIPE :


1. Take a pressure cooker or an Instant pot and sauté the onion, tomato, carrots, zucchini, corns, and baby potatoes chopped small in little oil or butter for 3 mins.
2. Pour 3 cups of water, coriander powder, star anise, cloves, salt, chicken thighs and mix them together.
3. Close the lid and cook in soup mode in instant pot and release the pressure. If you are using a pressure cooker, cook until 2 whistles.
4. Open the lid, take out half the chicken pieces in a blending jar and blend them into a thick paste.
5. Pour this back into the pot, stir and mix together to bring in some consistency in the soup.

Serve hot … kids love it ..:) and I love this one too.
Vegetarians can replace chicken with handful of sprouts and that tastes good too.
