Herb Roasted Chicken

2020 has been a torrid and an interesting year, we have learned to stay home, wear masks, watch lots of Netflix, cook a lot at home and of course socialize within a bio bubble. We wanted to organize a Christmas party in 2020 but the circumstances did not let us to, so we decided to have a family scaled party. Couple of our friends who wanted to celebrate with us, joined together and we decided to do a pot luck party and everyone was supposed to cook something interesting.
I generally do whole Turkey/Chicken in Thanks giving and Christmas dinners. I have had the rosemary whole chicken bake once in a friends place during Christmas and found it pretty good. I wanted to do something on the lines of the dish while also adding some flavors of my own. So I decided to add a lot of herbs to my marinade and then roast the chicken with lemon peels to get some acidity in it. The dish is a simple one again, the only work you do is while making the marinade else the chicken cooks by itself. We served this on the table and folks said this was the “Show Stopper” of the evening both in terms of its looks and the taste.

Cuisine – Greek, American

Ingredients:
1 Bowl of melted butter
4 Teaspoons of fresh rosemary leaves chopped small
1 bowl of fresh cilantro leaves chopped small
1 bowl of fresh parsley leaves chopped small
Salt to taste
1.5 Teaspoons of garlic powder
2 Teaspoons of lemon pepper powder
2 lemons (one for juice and slice the other into round)
1.5 Teaspoons of cumin powder
½ Teaspoon of black pepper powder
Some olive oil
Oil spray (Canola or vegetable)
Some dried rosemary leaves (Optional)

RECIPE :

Marinade -
1. Take a big bowl for marinating the chicken, add a bowl of melted butter in it.
2. Add the fresh rosemary leaves, cilantro leaves, parsley leaves , salt , garlic powder, lemon pepper powder, cumin powder and black pepper powder in the bowl.
3. Squeeze a lemon and pour the juice in the bowl, keep the lemon peels aside. We will use that for stuffing the chicken.
4. Mix them together into a moist green marinade, add some more melted butter if needed to make the marinade moist.

Chicken -
1. Take the whole chicken, remove the skin and make some incisions on its body for the spices to get infused deeper into the chicken.
2. Take a paper towel and pat the chicken dry, this is a necessary step as you should remove as much water from the chicken as you can before applying the marinade into it.
3. Use your hands to apply the marinade into the chicken, pour some olive oil. Do ensure that the marinade is consistently coated across the body of the chicken.
4. Now take the lemon peels and stuff then into the chicken. Add the extra marinade in the stuffing too.
5. Marinate the chicken for 3+ hours for good taste.

Roast –
1. Take a grill pan and spray some oil in it.
2. Place the chicken in the pan, add the left over marinade on top of the chicken with your hands.
3. Sprinkle some dried rosemary leaves on top. (Optional step).
4. Place the round lemon slices on top.
5. Set the oven at 450 degrees and pre heat it.
6. Once the oven is ready, place the grill pan in the oven and bake for 10 minutes.
7. Reduce the temperature to 350 degrees and bake for another 30 minutes.
8. Take it out, your roast is ready.

I like the roast this way as it keeps some of the green color intact on the skin. You can broil for 5 minutes at the end to get the charred layer on the chicken if you like that on your roast.
You can also mix and match or change the herbs to your liking but this dish goes good with the herbs I mentioned for the taste I wanted to generate in the roast.
