Stuffed Chicken Rolls

Chicken Rolls make me nostalgic, they remind of the streets of Kolkata and the Kathi rolls we get there. Chicken rolls have been a part of the culinary world since ages, you would find different versions of them in different parts of the world. This recipe is inspired from many of those rolls, I have used spinach and cheese and kept it simple along with some Cajun spice to give it some Creole touch. The dish is very simple and is a great choice for your party appetizers.

Ingredients :
1 Chicken Breast thinly sliced from the middle
2 Monterey Jack cheese slice.
Some spinach leaves (Blanched in hot water)
5 olives chopped small.

Rub –
Salt to taste.
Pepper powder to taste
Cajun Seasoning.
Garlic powder

RECIPE :
1. Place the Chicken in a flat surface, pound it if needed to flatten the breast.
2. Sprinkle the ingredients listed as “Rub”, you can keep the quantity based on your spice needs.
3. Now place the cheese slices, spinach and the olives on top.
4. Use your hands to roll the chicken breast, make sure the cheese and spinach are at the center of the roll. (Watch the video for more understanding)
5. Tie the roll with a thread ensuring the ingredients stay intact.
6. Place a grill pan in the stove, spray some oil in it.
7. Place the roll in the grill pan and cook it for 10 minutes ensuring all the sides and a brown layer in it.
8. Once you see a decent brown color layer, place the pan in the Oven and bake at 350 degrees for 20 minutes.
9. Take it out, cut them into smaller pieces and enjoy.

Optional dip – You can enjoy the rolls with an easy dip using sour cream or curd , blend cilantro, green chili, pepper powder, salt together into a dip.
