Coffee Rabhri

My day begins with a cup of coffee and it has been my routine since more than 10 years now. So, I do appreciate good coffee and is always in the lookout for one to try out. When I was working with Atnt , I used to love the cafe downstairs - Breve. I was surprised to find it’s a brand as well and they are local to Saint Louis. They sent me some goodies and I wanted to do something interesting with it. That’s when an idea popped up … to prepare a flavored Rabri using their coffee powder.
Rabri is an Indian dessert made out of milk using a specific technique . Yeah you boil the milk and stick the cream that gets produced while doing so into the sides of the vessel. At the end when the milk thickens , your scrape the sides and add it back into the mix to get a thick milk based dessert. You add saffron and dry fruits in the actual one but I have used coffee to develop a cafe flavor in mine.

Ingredients:

Milk – 6 Cups
Sugar to taste, I added 9 TSP
2 Cardamom pods
3 drops of Rose water
4 saffron strings
1 tsp of instant coffee powder

RECIPE :
1. Take a heavy bottom pan and add milk to it and bring it to boil.
2. Keep the stove at medium low and keep stirring.
3. Make sure the milk doesn’t stick to the pan at the bottom. Use a spoon to stick the milk on the sides and then scrape it and add it back into the pan. Keep doing this until the milk reduces and thickens up
4. Cook for an hour, let the milk reduce and your Rabhri is almost ready
5. Add 1 tsp of coffee powder, add sugar and rose water , mix together and cook for some more time.
6. You can add some saffron soaked milk too.
7. Pour the Rabhri in a bowl and garnish with some coffee powder using a strainer.
8. Optionally you can add some sugar crystals on top and use a torch to burn them to create a crust like Crème brulle.
