Green Banana Muffins

We are trying to move into a slightly healthy regime these days, we thought of cutting down on our sugar intake for a bit but our love for sweets is eternal. We had to make a tradeoff somewhere and hence we started experimenting with sugar free options. This dessert was born out of the same process wherein we used dates as sugar substitute and gosh it came so good. It is not entirely sugar free as we ended up using some chocolate chips as topping. The flour is made of oats and chia seeds and hence meets the healthy quotient demands as well. We also used spinach for the green color we desired in the muffins and topped it with some walnuts for a little texture on the top. It is a quick and easy baking recipe and uses your regular pantry items, try it and tell me how you liked it in the comments below.

Ingredients:
12 Paper cups.
Some oil spray.
2 Cups of oats
Some chocolate chips.
Some walnuts (12 of them) chopped small.

Batter ingredients –
4 dates – cut them into halves. This is the sugar substitute I am using here.
Peel and add 3 bananas.
2 eggs (replace with 1/2 cup curd if you want it vegetarian)
1 Cup of chia seeds
1 Cup milk
1 Teaspoon of baking soda
1 Tablespoon of baking powder
1 Teaspoon of Himalayan salt/normal salt
Some cinnamon
Handful of fresh spinach leaves
2 Teaspoons of vanilla extract
¼ bowl of coconut oil

RECIPE :
1. Spray some oil in the Muffin Baking tray and place the muffin paper cups in the slots.
2. Spray some oil on the cups now, this step ensures that your muffins don’t remain stuck to the paper upon baking.
3. Take 2 cups of oats in a food processor/mixer and grind them into a powder.
4. Add all the ingredients listed in the “Batter ingredients” section into the processor and blend them into a thick batter. It would look green in color and would be dense in texture.
5. Now pour the green color batter into the cups.
6. Throw in some chocolate chips in them, 3-4 per cup. You can mix them or just keep them as toppings as per your liking. I would do both and have two versions.
7. Throw the walnuts as toppings on top of the batter.
8. Throw the tray in a baking oven and bake at 350 degrees for 20 minutes.
9. Take them out and enjoy the green colored sugar free muffins.

You can also add some more condiments as per your liking, we added chia seeds and oats to keep it as healthy as we can go, after all it is a muffin.
