Baked Salmon Chipotle Ranch

Salmon is every fish lover’s favorite, a fresh fillet of salmon is a thing to die for any time of the day. I love baking salmon, I do have some basic recipes for salmon but I always experiment with sauces I use while baking them.
This is an easy recipe inspired by some Italian and Mexican dishes. The dish is simple, bake salmon using the Chipotle Ranch sauce and some herbs. You can pick and choose your own or follow mine, choice is entirely yours and every herb that you use will bring an element of itself into your plate.
I served it with a side of Guac, I used the same sauce to make the guacamole too. You can make it a full meal like I did by throwing in some veggies in the grill.
This is one of my weekday lunch favorites as you don’t need to monitor while cooking, you can attend a meeting while you get this ready for yourself and your family.

Prep Time – 10 Mins.
Cook Time – 20 Mins

Ingredients:
3 fresh salmon fillets.
Olive oil
Crushed chili flakes as per your spice palates.
Salt to taste
½ Teaspoon of pepper powder
Fresh lemon juice (1/2 lemon)
Fresh mint leaves chopped small
Fresh parsley chopped small
2 tomatoes cut in halves
2 Teaspoon of Hidden Valley ranch seasoning.
½ bowl of Hidden Valley Southwest chipotle sauce.
5-6 fresh mini colored peppers.
½ bowl of fresh cilantro
1 avocado, peeled.

RECIPE:
Sauce –
1. Mix the ranch seasoning with the chipotle sauce, whisk them nicely to bring them to consistency.

Grilled Salmon -
1. Take a grill pan, spray some olive oil and place the fillets in it.
2. Sprinkle some olive oil , crushed chili flakes, salt, pepper powder, lemon juice, mint and parsley on top of the fillets.
3. Pour half of the sauce on top of the salmon fillets.
4. Place the pan in medium heat on stove and let it cook for 3 minutes.
5. Place the tomatoes in the grill pan. Throw some peppers in the grill pan.
6. Set the bake to 375 degrees and preheat the Oven.
7. Place the grill pan in a conventional oven and bake for 10 minutes at 375 degrees.
8. Broil at the end for 3-5 minutes to get the crust, your fish is ready.

Sauce Dip
1. While the fish is in the oven, take ½ bowl of mint leaves , rest of the sauce , fresh cilantro, avocado salt to taste and ½ cup of water in a blending jar.
2. Blend them into a thick dip.

Serve the fish fillets, with the grilled tomatoes and peppers and the dip. Enjoy them hot.
