Battered Salmon Fry

There are days you want to eat fish but do not have the energy to pull out a big recipe, this one comes as a boon for those days as the dish is quick and easy and is very tasty. Salmon is readily available and should always be in our refrigerator for these kind of quick dishes, it is also a rich source of protein.

I had made this dish for this video primarily. There was a talent competition in my Company and you are supposed to post small videos of some activities. Cooking/Culinary skills obviously was a category and I decided to make this video to get 50 points for my team. I loved the recipe and hence decided to add it to the site and also in you tube. This is my first video there so ignore the mistakes, with time I should post better videos but the recipe is true to my heart and its a really good one that you all should try.

Ingredients:
1 small bowl of Besan (Gram flour)
1 small bowl of Rice Flour
3 Spoon of Olive Oil, Canola should do as well.
1/2 Spoon of Turmeric powder
1/2 spoon of Chili powder
1 Spoon of Coriander powder
1/2 spoon of Cumin powder
Salt to taste
Pepper powder to taste.
1 Egg
1 Spoon of Coriander seeds
1 Spoon of Fennel seeds
3 Salmon fillets.
2 Strands of Fresh rosemary. (Optional)

RECIPE :

Batter :
1. Add the Besan (Gram flour) and Rice Flour into a bowl.
2. Add 1/2 Spoon of Turmeric powder, 1/2 spoon of Chili powder, 1 Spoon of Coriander powder, 1/2 spoon of Cumin powder into it.
3. Add spoon each of Coriander and Fennel seeds, some pepper powder and salt into it.
4. Add an Egg and whisk the batter nicely, make sure there no lumps. (refer the video if needed)

Salmon Fry :
1. Dip the salmon in the Batter, make sure you cover the entire salmon with the batter using a spoon.
2. Take a flat pan and pour some oil in it and let it heat.
3. Add the fish and keep the heat to low/medium. Shallow fry it.
4. Add a strand of rosemary in the Oil. (See the video for reference) - Optional step.
5. Turn it after 6 minutes and shallow fry the other side for 6 more minutes.
6. Check the surface , it should look brownish and you know the Salmon is ready.
7. Serve it on a bed of pasta.
