Salmon Bake with a Creamy Pesto Sauce.

While Dad was in awe praising the dish in Food Network, I thought of giving the cheff some competition:) I finished the plate before the episode was over on TV as I cooked the stuff in parallel and Dad gave me look of awe, so did Mom who is basically my Idol when it comes to cooking. They loved what was served to them and I was a proud son.

This dish was the winner of an Online Cooking contest . The contest was judged by Master Cheff India Jury - Chef Banerjee

Ingredients:
2 scoop of Butter.
Oil Spray for the Grill Pan.
1 Spoon of Olive Oil
3 Fresh carrots , cut into straight.
9 Beans cut into halves
1 bowl of Lima Beans.
Italian Seasoning – to taste.
1 Avocado
1 Garlic Cloves.
2 Spoons of Milk Cream.
2 Spoons of Cream Cheese
1 Spoon of Pesto Mix
3 Skinless Salmon fillet
Fresh Sage
Fresh Parsely
1 spoon of Cumin powder
1 spoon of Pepper powder
Salt to taste

RECIPE :
Side –
1. Take a pan and add a scoop of butter to it. Add the fresh cut Carrots (thin straight pieces) , Beans cut into halves, lima beans and saute them until they seemed cooked.
2. Add salt to taste and some Italian seasoning while you cook the sides.
3. Slice an avocado to add some freshness to the plate.
Sauce –
1. Take a scoop of butter in a pan, add a fresh garlic clove (mashed) into it and heat it for 2 minutes.
2. Add two spoons of Cream Cheese into the pan, add a Spoon of Fresh cream and keep stirring until the cheese melts into the sauce.
3. Add a spoon of the Pesto Mix into the sauce, salt to taste(limit the salt as there would be salt in the salmon too) and keep stirring for occasionally for 3 more minutes. Your sauce is now ready.
Salmon-
1. Take a Skinless Salmon fillet and place it in a Grilled Pan after spraying some oil at the base. Use a foil on the Pan as it helps control the heat into the Salmon.
2. Sprinkle fresh Sage, Parsely , Oilve oil, Salt to taste, Cumin powder , black pepper powder and bake for 14 minutes at 350 degrees.
Plating -
1. Take the fish out and plate it, place the vegetable sides on the plate. Pour the sauce on top of the fish and the side , sprinkle some fresh parsley on the plate and some Italian seasoning.
2. Serve the plate with a glass of White Pinot Noir, does wonders in our mouth.
