Salmon in Basil Pesto - Chili Garlic sauce.


This is a dish that serves as your go to when you want to eat a meal which is extremely healthy but at the same time enormously tasty. I prepared it while experimenting with salmon marinades for quick and easy dinners. I love to do baked salmon meals cause at the end of the day, they never go wrong - Salmon 🤟and this one is a prime example.
So I played around with two sauces – “Basil Pesto” from Italy and “Chili Garlic” from China and used them to cook Atlantic Salmons bought from Aldi for the base of the dish. I also added some veggies using the sauces to make it a complete scrumptious meal.
Sharing the recipe as it is super simple and can make your life easy. It is super kid friendly too and they seem to love it.

Prep – 10 mins(Considering you would bake and sauté simultaneously)

Ingredient:
3 Tablespoons of basil pesto sauce
1 Tablespoon of chili garlic sauce
Salt to taste
Pepper powder to taste
6 Salmon fillets
Some paneer cubes
Olive oil
3 Fresh corn
1 Zucchini cut into long slices
Chop some bell peppers
4 Small potatoes sliced thin
Some asparagus
6 Green chili , 1 per plate.

RECIPE :


1. Take a mixing bowl and add the basil pesto sauce, chili garlic sauce, salt to taste and pepper powder to taste in it. Whisk them to prepare the marinade.
2. Place the salmon fillets in a baking tray, pour the sauce on top and apply them using a spoon.
3. Bake them for 12 minutes at 350. Broil at the end for 5 mins to get the crust and char on top. Take them out and keep aside.
4. Mix paneer with the remaining sauce. Take a pan and pour some olive oil in it. Toss the paneer and cook them for 7 mins, keep them aside .
5. In the remaining sauce and oil left in the pan, throw some fresh corn, zucchini, bell peppers. Sauté them for 7 mins and take them out. You can use medium to high flame for this step.
6. Toss the potato slices in the pan with the remaining oil. Close and sauté for 6 mins and they should be cooked with little chars and burns which makes they crunchy.
7. You can also sauté asparagus and other veggies of your choice. I also like to fry a green chili to add some hotness to my plate.
8. Plate them as shown in the picture and enjoy ..!!!
