Tilapia Tikka Masala

Tikka masala has become a brand here in the States, and everyone thinks we Indians eat it at least once in a week in our homes. I want to clear the air here, Tikka Masala although so much Indian it sounds is a British (Indian) Dish.... yes you heard it right..!!! It was first made in the UK. It is a rip off dish which closely resembles Moti Mahal's famous butter chicken but was first cooked by a Bangladeshi Chef in the UK and then was later adopted by restaurants all over the world as the most famous Indian dish in their menu. I have to give it to Tikka Masala though, its probably the most sought out dish outside of India by Non Indian folks , thanks to its creaminess , it works wonders on a lot of palates. I also remember a lady joining a Meeting and sarcastically mentioning her name in the Bridge as Tikka Masala . Well no matter where you are , a little racism is always there.

So we planned to make Fish this evening only to realize the fish has gone bad and we had to throw it away. I was hell bent that I am eating fish today, so took out the Frozen Tilapias from my Deep Freezer, thawed them and made this Quickfire Tikka Masala. Trust me , the friends who were staying with us for the week tasted the Fish and just loved it, it indeed came up so good.

Cuisine – Indian , Italian

​Prep: 10 mins.
Tikka :10 minutes.
Cooking: 25 minutes

Ingredients:
Whole Masala
3 Cloves
2 Cardamom cloves
2 bay leaves.
1 black cardamom
½ inch Cinnamon stick
½ spoon Fennel seeds.
½ spoon Cumin seeds.

Others –
1 onion diced into medium pieces.
2 small tomatoes diced into small/ 1 big tomato.
1.5 spoons of Ginger Garlic paste
2 chillis , cut into small pieces.
½ spoon Sugar (Optional)
3 scoops of butter.
Tilapia – 4 slices cut into medium pieces.
1 spoon of Garam masala
1 spoon of Coriander Powder
5 Cashew nuts. (Almonds will work too but cashew is preferred)
½ cup Cream (You can also substitute this with Full Fat whole milk or Beaten Yoghurt)
1 spoon fresh cilantro leaves.

RECIPE :

Tikka : Make a note that this can be done in parallel with the Masala.
1. Take a Grill Pan/Flat Pan and spray some oil in it and keep the flame to medium.
2. Place all the Fish pieces in it making sure the fish touches the surface of the pan. Use a Tong as that works best , it would ensure you don’t break the pieces.
3. Sprinkle some salt, turmeric and chilli powder on the fish and cook for 4 minutes.
4. Turn the fish around and cook it for 4 more minutes and turn off the stove.

Tikka Masala
1. Take a wok/vessel and pour 2 scoops of butter in it. Heat it for a minute and let the butter melt.
2. Add the whole spices and saute for 2 minutes.
3. Add the Onions and fry till it becomes golden brown.
4. Add 1.5 spoons of Ginger Garlic paste and the cut chilis and saute for 3-4 minutes.
5. Add a spoon of Coriander powder and Garam masala now.
6. Add the cashew nuts and the tomatoes and cook for 5 more minutes stirring it occasionally to ensure it doesn’t stick to the pan.
7. By now you should be able to see the butter would start to separate from the Mix. Add ½ cup of Cream and cook for 2 more mins.
8. Close the lid and let it cool , I am impatient at most times and just blend it immediately. You can do so as long you are careful .
9. Put this in a blender and blend it to form a thick paste.
10. Please do not blend the bay leaves, keep them aside.

Tilapia Tikka Masala
1. Add a scoop of butter in the wok and turn back the stove on.
2. Add the bay leaves back.
3. Add the Tikka Masala sauce in it and start heating the same for 2 minutes. Add some water to normalize the thickness.
4. You can add ½ spoon of sugar if you like a little sweetness in your dish.
5. Add the fish Tikkas in it and cook for 5 more minutes, stir carefully but occasionally to deglaze.
6. Turn it off and close the lid.
7. Garnish with fresh cilantro leaves.
8. Serve hot with Naan or Rice.

You can sprinkle some saffron/milk on top for presentation and look but that’s totally a choice.
