Mutton Kasha Roast. ( Niramish Mangsher Roast) ​ - My rendition of the all famous Bengali Mutton dish.

​Niramish Mangsher Kasha Roast. ( Vegetarian Mutton Roast) . This is a customary thing for Bengalis to make Mutton without Garlic, Onion and Ginger during Puja days. Indian mutton curry without those three items that generally forms the base of the mutton gravy is unheard of .This type of a dish is mostly cooked during Kali Puja times and is also served to the god , hence the absence of the three items that makes it unholy.... lol... I know it’s debatable but we have been doing it for centuries , it was my take on the same dish but I chose to roast the mutton instead of making a curry.

Prep Time - 15 Mins.
Marination – 1 Hr
Cook Time – 60 Mins.

Ingredients:
1 spoon of chilli powder
1.5 lb Mutton cut into medium size.
1 spoon of Turmeric powder.
1 spoon of Cumin powder
1 spoon of Cumin seeds
1/4 spoon of fennel seeds
2 cloves
1 small stick of cinnamon
2 cardamom pods(break them)
3 Spoon of Oil
½ spoon of Coriander seeds
2 fresh green chilis cut small.
Half cut tomato.
Fresh chopped cilantro leaves.
1 spoon of Meat Masala.


RECIPE:
1. Marinate the mutton pieces with Oil ( mustard oil but I used canola ) , Res chilli, Turmeric and Cumin powder for an hour.
2. Take a Pan with flat surface and pour some oil.
3. When the Oil heats up add 1 spoon of Cumin seeds, 1/4 spoon of fennel seeds, 2 cloves 1 small stick of cinnamon and 2 cardamom pods(break them). I like to add Coriander seeds as well but that’s entirely up to you.
4. Sauté for a minute and add the mutton and fresh cut green chili’s .
5. Keep frying/sautéing it , keep the lid closed and keep rotating them so all sides and cooked .
6. When the masala starts catching up in the pan , pour a little water , salt to taste and add half a tomato for some tanginess to it.
7. Add some fresh coriander and keep cooking.
8. Now at this moment you can add a pinch of Meat Masala ( your shot)
9. Keep cooking until the water dries out.
10. You also need to take care of how you like your mutton and cook accordingly, I like the toast a bit chewy.
