Ingredients:
2 spoons of Curd/Yoghurt.
3 Spoon of Oil
1 spoon of Kashmiri chilli powder
1.5 spoon of Cumin powder
Salt to taste
Meat masala (Optional)
2 cloves
2 cardamom pods.
1 big\black cardamom
Cinnamon Stick 2 inches long/
½ spoon of coriander seeds
3 Bay Leaves
½ spoon of Fennel Seeds
½ spoon of black cumin seeds
1 thinly sliced Onion
2 Ginger Pieces thinly chopped
Fresh Mint Leaves
1 spoon of Turmeric powder
1 Spoon of Garam Masala
Pinch of Nutmeg powder.
Pinch of mace
2 tomatoes cut into small slices.
2 cups of rice
Mutton – 1.5 lb.
1 Scoop of Ghee (Clarified Butter)
Freshly chopped coriander leaves
1 Carrot.

RECIPE:
1. Marinate mutton pieces with Oil, Curd, Chili powder, Cumin Powder and Salt. (You can also use Meat masala but add a little , you don’t want the taste to be overpowered by this one)

2. In a Pan put 2 cloves, 2 cardamom, 1 big\black cardamom, Cinnamon Stick 2 inch, Coriander seeds, Bay Leaf -2 , Fennel Seeds ,black cumin seeds with Mustard Oil and sauté for a minute.
3. Add thinly sliced Onions , Ginger Pieces thinly chopped, Mint Leaves and sauté until the Onions become golden brown.
4. Add 1 spoon of Turmeric powder, Garam Masala , ½ spoon of cumin powder, Pinch of Nutmeg powder, mace.

5. Add the mutton fry the mutton for 10 mins, add tomatoes.
6. Now pressure cook the mutton – 4 whistles. Add minimum water while doing it .

7. Take a rice cooker , add 2 cups of rice with 3 cups of water. Add the cooked mutton in the rice cooker.
8. Add a scoop of Ghee , you can also add a bay leaf in there if you like the smell it generates while cooking rice.
9. Cut potatoes into half and add them , these potatoes tastes heavenly once the Pulao is cooked.
10. Sprinkle coriander leaves on the top, add a layer of grated Carrots on top. This would bring nice orange color, texture and taste to your pulao.

11. Cook the rice now (1 whistle in the pressure cooker, 12 minutes in Insta Pot) and serve hot.
