Malai Prawn/Shrimp Curry

Malai Prawn/Shrimp is one of the most iconic Bengali dishes , it is a thing that is cherished by all Bengalis no matter where you are . I spent most of childhood in the borders of MacMohan line in the north east, the perks of which were easy fresh vegetables and fruits but as they say the coin has two sides and the biggest con of living there was the unavailability of Sea Food like Prawns . So I cherish some sweet memories of visiting Kolkata , my hometown, every year and relishing this curry . I have heard in folklores that the British used to love this dish during the colonial times as well.
I should mention here that my uncle , Mr Shanti Mukherjee , makes the best Malai prawn curry ever, I have never had this dish as good as he makes and trust me I am an avid prawn eater so I have had many versions of this dish.
There are various renditions of this dish, you can find many of them online and this one is my version. I have tried to be true to the Bengali version with some subtle changes, please try this dish at home and let us know. This is a very easy recipe and can be made with a handful of ingredients which makes it one of the easiest among the list of exotic dishes back home.

Cuisine - Indian, Bengali

Prep Time – 5 Mins.
Cook Time – 30 Mins.

Ingredients:
20 Shrimps.
3 Spoon of Oil
½ Onions diced into small pieces.
2 chili’s cut in long halves.
4 pods of Garlic chopped fine.
1 Spoon of Ginger paste.
1 spoon of Coriander powder
1.5 spoon of Everest Fish Masala
½ spoon of Chili powder
½ Spoon of Cumin powder
2 bay leaves .
1.5 spoon of Ghee or Clarified Butter.
2 Spoons of Cream (Optional)
Some fresh cilantro leaves chopped small.

Ground Spices –
4 Cloves.
3 Cardamom.
1 Cinnamon stick.
1 Spoon of fennel Seeds
1 Spoon of Coriander seeds.

RECIPE:
1. Pour 2 spoons of Oil in a Pan and let it heat.
2. Add the ground spices when the oil gets medium hot and sauté them for 2 minutes. If you don’t have these , use All Spice/Garam masala instead .
3. Add the onions, chili and garlic and sauté them for a minute.
4. Add the Ginger paste and keep stirring until the onion becomes golden brown.
5. Add one spoon of Coriander powder , 1.5 spoon of Everest Fish Masala (or 1 spoon of Garam masala),
6. ½ spoon of chili powder and ½ Spoon of cumin powder. You can also replace the chili powder with white pepper powder to keep the color more whitish.
7. Sauté the mix for 5-6 minutes until the masala gets cooked.
8. Now take out the green chili from the pan and blend the rest of the cooked masala in a Blending Jar to form a thick paste.
9. Add 1.5 cups of Coconut milk to the Paste .
10. Add the ghee in the same Pan , add the bay leaves and the chili you took out before and saute them for 30 seconds.
11. Add the shrimps now , sprinkle some salt and add a spoon of sugar.
12. Saute them for like 3-4 minutes until they start turning orange in color.
13. Add the paste with the coconut milk in the Pan, mix them together.
14. Close the lid and cook for 6-7 minutes and your shrimp would be ready.
15. Pour 2 spoons of Cream on it and close the stove. (Optional Step)
16. Sprinkle some fresh cilantro leaves on top and serve hot.
