Shrimp Pulao

Shrimp is one of my favorite foods and I love the Pulao's we can make out of Shrimp as the rice gets flooded with the Aroma from the Shrimp and there is none as tastier as that. This recipe is something I employ when I want to eat some good food without investing a lot of time preparing it. Shrimp cooks very quickly and hence the prerequisite for the Pulao is very easy and quick, I use the Instapot or the Pressure cooker and that makes this recipe a lightening fast one to prepare without compromising on the taste of the dish.

This should be something you should definitely try out during your weekdays , you should not do away with good food just because you had a rough and busy day at work .

Ingredients:
½ cup Curd/Yoghurt.
3 Spoon of Oil
15 Shrimps (Tails peeled)
1 spoon of Cumin powder
1 spoon of Coriander powder
1 spoon of Garam Masala powder
Salt to taste
2 cloves
2 cardamom pods.
Cinnamon Stick 1 inches long
2 Bay Leaves
½ spoon of Fennel Seeds
2 Green chilli cut into half
½ spoon of black pepper seeds.
1 thinly sliced Onion
1 spoon of Ginger Garlic paste
1 spoon of Turmeric powder
Pinch of Nutmeg powder.
Pinch of mace
1 tomatoes cut into small slices.
3 cups of rice
1 Scoop of Ghee (Clarified Butter)
Freshly chopped Cilantro leaves
1 Carrot.

Recipe :
1. Take an InstaPot or the Pressure Cooker and pour some oil in there.
2. When the oil heats up, add the bay leaves, cloves, fennel, mace ,black pepper corns, cardamom and cinnamon in the oil and sauté for a minute.
3. Add thinly sliced Onions , sauté it until it gets golden brown color.
4. Add a spoon of Ginger garlic paste and the chillis. Saute for a minute of two.
5. Add a spoon of Turmeric, Corainder, Garam masala and cumin powder and keep mixing them for 2 mins.
6. You can add a pinch of Nutmeg powder to it as well.
7. Add the Shrimps now and saute the mix for 2 minutes.
8. Add the tomatoes and saute for a minute more.
9. Beat the yoghurt/curd and add the same in the Pot/Cooker.
10. Now add 3 cups of rice and 4.5 cups of water if its an Instapot or 6 cups of water if it’s a pressure cooker.
11. Add a scoop of Ghee into the pot/cooker.
12. Add 2 spoons of salt , sprinkle the chopped cilantro , shredded carrot on top.
13. Close the lid and Pressure cook for 1 whistle/Rice mode in Istapot.
14. Serve hot with some Raita or Pickle. Since you have added curd, the rice would be moist and hence could be eaten without any side too.
