Basil Beetroot Fried Rice

Some left over rice and a busy workday - looks like heaven is shouting it loud asking me to make some fried rice. I quickly checked the fridge and there was a 1/2 cut beetroot and I decided to make a beetroot rice. I love making these time and again, the beetroot renders a beautiful red color to the rice and makes it look fancy for a quick lunch. I also spotted some basil leaves and threw them in the wok to give it a bit of Thai touch.

Ingredients:
1 Teaspoon of garlic powder
1 Teaspoon of ginger powder
1 Teaspoon of coriander powder
½ Teaspoon of chili flakes
½ Beetroot sliced thin
Some fresh basil leaves
Some cilantro leaves
Some bean sprouts
1 Tablespoon of tomato sauce
Some chipotle sauce
Salt to taste
Cooked white rice

RECIPE :
1. Take a pan, pour a little olive oil, add the garlic powder, ginger powder, coriander powder, chili flakes and sauté for a minute.
2. Add the beetroot slices, fresh basil and cilantro leaves, bean sprouts and sauté for 3 more mins.
3. Add the tomato sauce, chipotle sauce, salt and sauté for a minute or two.
4. Toss the left-over rice, stir and mix well on medium heat until the rice turns into read color and serve hot ,
