Palak Rice (Spinach Rice)

​I have getting a lot of requests to posts easy recipes as the world is in lock-down and it is not easy to get the uncommon ingredients I use in many of my dishes. So I decided to post a recipe of a dish I used to eat a lot during my earlier career days, I was living a bachelor in the city of Pune India and there used to be a Udipi cuisine restaurant Prasanna nearby. I used to order To Go’s sometimes from there and this dish used to be my favorite togo – Palak Rice. Since its loaded with Spinach, you get the Greens your body need and the Carb from the rice which we all need in our younger days. This also cooks fast and is a very easy one to make, it tastes really good and should be tried by you all during this quarantine time.

Ingredients:
3 Spoon of Oil
2 cloves
2 cardamom pods.
Cinnamon Stick 1 inches long
3 Bay Leaves
½ spoon of Fennel Seeds
1 chilli
Yellow/Orange or Red peppers (Optional for some color on the plate)
Spinach – 1 big bowl.
Ginger garlic paste – 1
1 Onion
1 scoop of butter.
3 cups of rice
1 spoon of Turmeric
1 spoon of Corainder
1 spoon of Cumin powder
½ spoon of Garam Masala (Optional)
*** A small cube of Paneer (Optional, you add this and this no longer remains vegan )

RECIPE:
1. Take an InstaPot or the Pressure Cooker and pour some oil in there.
2. When the oil heats up, add the bay leaves, cloves, fennel, cardamom and cinnamon in the oil and sauté for a minute.
3. Add thinly sliced Onions , sauté it until it gets golden brown color.
4. Add a spoon of Ginger garlic paste and the cut chillis. Saute for a minute of two.
5. Add a spoon of Turmeric, Coriander and cumin powder and keep mixing them for 2 mins.
6. You can add a pinch of Garam Masala or All spice to it. (Optional)
7. Add the spinach to it and let it settle down, it should turn dark green in color.
8. Take out the spinach and blend them it in a grinder. Add it back to the instapot or the Pressure cooker.
9. Add a scoop of butter and add the veggies , give it a whisk.
10. Add 3 cups of rice into it and mix it together.
