Peanut Okra Roast with “Roasted Pepper Sauce”

Formosa has sent me some goodies and since then I have been playing around with their sauces. I love some Roasted Okra/Ladies Finger/Bhindi with a plate of Rice and Dal (Lentils). It is the real form of comfort food for me and something that I have grown up eating on busy weekdays. It is an easy meal to make and hence I prefer the combo for my luncheons. Roasted okra is generally made with some Indian spices when we pair it with Daal (Indian Lentil curry) and some rice.

I added a small twist to this recipe adding some Mexican flavors to my Okra. Thanks to the fantastic sauce from Formosa, I was able to add a new dimension to the dish. It is a great recipe and a super tasty one, do try the same and let me know in the comments below.

Ingredients:
15-20 Okra.
Some canola oil spray
1 Bowl of peanuts
2 Teaspoons of Roasted Pepper Sauce
Salt to taste

RECIPE :

1. Chop the okra’s into thin pieces round pieces.
2. Take a pan, pour some oil, and bring it to heat.
3. Throw in the okras and let them cook. You can stir occasionally keeping the lid closed to cook them faster. It should take 10-12 minutes for them to get roasted in the oil and get some chars on their surfaces.
4. Roast some peanuts in the side in a flat pan and then grind them in a processor into a coarse powder.
5. When the okras are like 70% roasted, add the peanut from step 4 into the pan with the okras.
6. Pour the Roasted Pepper sauce in the pan, mix them together and cook for 5 more minutes keeping the lid closed.
7. Add salt as needed, mix thoroughly, and turn off the stove.

You can serve them hot with some white rice and lentils.
