Rajma Galouti Kebab

I have talked before about the gelouti kebab and I do not want to go gaga over it again , but its probably the best kebab on earth. So why not try a vegetarian version of it for our friends, I decided to make Rajma galouti kebab for the weekend.
Interestingly it’s the COVID quarantine time and our friends who came back from India had to quarantine and isolate them for 14 days and are getting released today to go and visit folks outside. I decided to make this dish for the union and boy isn’t this a wonderful vegetarian version of this exotic kebab.
This one was great fun to make as I had Sandy, Neetu and Gaurav make the patties for me , I also made a cocktail video at the same time while I let them fry the patties for me.

Cuisine – Indian, Awadhi, Mughlai

Prep: 27 mins (Can be reduced if you can prepare the spices in parallel).
Cooking: 25 mins

Ingredients:
1 pound Rajma or Kidney beans.
2 bay leaves.
Salt to taste
12-15 cashew nuts.
1 bowl of Poppy Seeds (Posto)
½ spoon of Turmeric powder (Optional)
½ Onion finely chopped.
Some fresh mint chopped small.
2 Green Chili
4 Garlic pods chopped into small.
1 inch grated Ginger
2 Spoon of Kashmiri chili powder.
2 big spoon of Coriander powder.
2 spoons of Garam masala.

Ground Spices –
1 spoon of Shah Jeera.
5 Cloves.
5 pods of Cardamom
2 inch of cinnamon stick.
4 black/big cardamom.

RECIPE:

1. Take a pressure cooker and add the rajma to it.
2. Sprinkle sone salt , Add 2 bay leaves and a Cinnamon stick
3. Pressure cook it for 3 whistles.

Nutty Paste –
1. Dry roast the Poppy Seeds and the Cashew nuts in a flat pan.
2. Let them flutter and turn light brownish.
3. Add them to a grinder, add some water and grind them to form a coarse paste. (Check the video )

Ground Spices-
1. Dry roast the ground spice mix in a flat pan.
2. Add a little turmeric powder while roasting (Optional)
3. Roast then for 2-3 minutes and then grind them into a powder.

Masala –
1. Add 2 spoons of oil in a pan and let it heat.
2. Add the Onions, ginger, garlic , mint and chili and saute them for 7 minutes until they turn brown in color.
3. Add the Chili powder, garam masala and the Coriander powder.
4. Saute the mix for 5 more minutes and your masala is done.
5. Adda little salt and blend it together into a thick paste.

Kebab -

1. Take the boiled Rajma in a big bowl and mash them. (check the video for details)
2. Add the nutty paste, ground spices and the masala prepared in above into the bowl.
3. Mix them together properly so that they are consistently blended together.
4. Taste for additional spices and salt and add if you need a little something in your kebab.
5. Use your hands and make the Tikki/Kebabs/Patty .
6. You can use some rice flour or corn starch as a binding agent, don’t add more of them as the kebab is supposed to be soft.
7. Make nice round flat patties with your hands and keep them aside.
8. Now add some oil to a Pan and place the Patties in the oil gently.
9. Let them cook in medium flame for like 7 minutes each sides.
10. Check for the texture, you should see a brown charred layer on top and that should tell you that your kebab is ready.
11. Serve it with Onions and Mayo.
