Sarso da Saag (Mustard Green Curry)

The dish is purely Punjabi and I love this dish to the core. It is probably my favorite Punjabi vegetarian dish and if you have not

had this yet, you are missing something. This dish is very popular and is had with Makke di Roti (bread made of corn flour.) in the northern belt of India .

So my lovely American neighbors(Brian and Cheri) texted me and asked me if I can cook this dish for them , they seemed to have an over production of these leaves in their cute little kitchen garden and they googled to find this Indian dish . Well I would never say no to such an offering , Fresh mustard leave - Hell No... Bring them ON !!!! So thanks to them I was able to make it and post it here. They were awestruck with the taste of the dish, again its the dish that never goes wrong if you use the ingredients in the correct proportions.

Cooking : 35-40 mins.

Ingredients:
2 spoons of Ghee
1 cardamom pod.
2 cloves
Salt to taste.
1.5 spoon of Cumin seeds
1 Onion diced into long thin slices.
2 chili cut into half.
4 Garlic cloves.
1 inch Ginger, cut into thin slices.
1 Spoon of Coriander powder
1 Spoon of Turmeric Powder
Pinch of Hing (Asafoetida )
1 Spoon of Cumin powder.
1/2 Spoon of Chilli powder.
1.5 spoon of Kitchen King (Optional)
Mustard Greens - 1 big bowl. Do not add the stems, just need the leaves.
Spinach (Equal amount of Spinach , it should match the mustard greens).
1 Tomato diced into medium pieces. (Optional)
1/4 cup cream (Optional for vegan folks)
2 Red Chilies (Optional)
Gram / Chana dal (Optional)

RECIPE:
1. Add 2 spoons of Ghee in a Pan let it heat.
2. Add the Cardamom and cloves , Cumin seeds keep sauteing for a minute.
3. Add the onions and fry till it turns Golden Brown.
4. Ad d the Ginger, Garlic and Chilis and keep frying for 2 more minutes.
5. Add the Spices - turmeric, hing, cumin, chili and kitchen king and keep sauteing for 3-5 minutes.
6. Add the mustard Green leaves and the Spinach. Keep cooking them until the leaves settles down. Should take like 10 minutes for this.
7. Add salt to taste and cook for 3 minutes.
8. Add the tomatoes and cook for 2 more minutes. (Optional)
9. Use a blender to form a coarse blend of the Greens. refer to the video if required.
10. Close the lid now and keep cooking the Coarse blend of Greens in medium heat for 5 more minutes.
11. Keep stirring occasionally to prevent it from catching at the bottom of the pan.
12. Add some cream to it, mix the cream and again cook it for 5-7 more minutes. (Optional for vegan folks)
13. The dish is now ready.
14. Optional Step - Take a pan and heat some ghee on it. Add 2 red chilies and some gram and fry it for 2 minutes. Pour the ghee on top of your dish and serve hot.
