Spinach Fritters(Palak Pakora)

It is an Indian thing , when it rains we always long for a cup of hot tea (Chai) and some fritters (Pakoras). Now we make pakoras out of anything, potatoes and other veggies, even chicken and the rules are simple . You always make the fritters using a batter made of gram flour or besan and then spice it up to your taste.
So this evening was no different, very lazy owing to the gloomy weather outside, thus we decided to live our fantasy by making some fritters and tea. I did not make the conventional fritter but used spinach in them and cooked the green spinach fritter which my mom used to make at home. It is vegan, crispy, crunchy and very tasty for everyone’s palate and you should try it if you like to taste something new.

Ingredients:
Some spinach leaves chopped medium
1 Tablespoon of pine nuts

Batter -
2 Cups of gram flour (besan)
1 Teaspoon of carom seeds (ajwain)
Salt to taste
1 Teaspoon of turmeric powder
1 Green chili chopped small
Some green chili sauce
Add spices like curry powder as per your choice (Optional)

RECIPE :


1. Take a mixing bowl and add all the ingredients listed in the batter above. Pour a little water and mix them together. Whisk properly ensuring there are no lumps and the batter is consistent.

2. Add the spinach and pine nuts and mix them with the batter.

3. Take a deep bottom pan, pour oil in it and bring it to heat.

4. Use your hands to take some spinach together with the batter and pour the same in the oil.

5. Use a tong to turn and fry them for 7 minutes each side and take them out. The fritters or palak pakora are ready.

Serve hot with some Chai Latter and some hot green sauce as a dip.
