Vietnamese Cold Roll

Vietnamese rolls were something that was introduced to us by our dear friends Ji and May. We did a patio party once at their place when they made it for us and we loved the concept of getting involved, make our own rolls, add our own ingredients and eat. The beauty of this dish is that you don’t follow any rules, you can add any fresh produce that you get in the market or grow in your kitchen gardens. This one is more about having fun with friends while eating together, it is also very easy and needs less prep so you may want to do it when you invite your friends without much efforts. This has become my wife’s specialty and she makes these sometimes during summer days when we have friends at home.
Along with the fresh look and beautiful looks, it tastes brilliant too. You can use whatever sauces you like but I love the Peanut sauce that my wife makes for this , which compliments the condiments with some sweet and tangy flavors. You can also add some sea food/meat and make it your own. I am writing a vegetarian recipe here.

Cuisine – Vietnamese

Prep: 10-15 mins (Depends on your chopping skills).
Cooking: 2-3 mins

Ingredients:
3 Fistful of Peanuts.
Tofu – Cut into long pieces.
Rice Noodles. (See video for the brand I use)
Rice Paper (for rolls, see the video for the brand)
Hoisin Sauce (1 bowl)
Chili Garlic sauce – 2 spoons.
Salt and Pepper to taste.

Veggies – (It is your choice, you can add veggies as you like)
Carrots – cut into long thin pieces.
Lettuce
Basil Leaves – This is for me the main ingredient on my rolls.
Avocado – I don’t like this one in here, but my wife does and her friend Cherri loved it.
Cilantro -bunch of them
Mint Leaves.
Cucumber thinly cut into long pieces.

RECIPE:

Peanut Sauce –
1. Roast some peanuts in a little oil.
2. Once the peanuts are done, take them out and peel them.
3. Now crush the peanuts to make them crumbled, don’t turn them into a powder.
4. Take a bowl of Hoisin Sauce, add 2 spoons of Chili Garlic sauce in it. Both these sauces are readily available in any Asian store or super markets.
5. Mix them properly to bring in some consistency.
6. Add the peanuts in the sauce and mix them properly, Your sauce is ready now.

Noodles -
1. Dip the noodles in some hot water for 10 minutes and take them out.
2. Stain the noodles and add some ice cubes on the noodles.

Rolls -
1. Take the rice paper and dip into Warm water for 5 seconds.
2. Place the paper in a plate.
3. Add the veggies you prefer.
4. Add Salt and pepper to taste.
5. Roll the veggies with the rice paper roll, it becomes sticky and sticks properly so you don’t need to tie the rolls.
6. Dip it in the sauce and Eat.
