Veg Baked Poutine

Poutine is a classic Canadian dish from Quebec. It is French Fries served with Cheese and brown gravy in the most primitive sense. The legend says that the dish took birth when a customer requested cheese curds on his to go order of fries and the owner decided to pour the curds on top of the fries in a plate to avoid a mess. He later added the brown gravy to keep the fries hot for a prolonged period and hence was born – “the Poutine”.
This is my take on the Poutine, I have added some vegetables, used boiled potatoes for the healthier reasons and have also used some spices to add some flavors to the dish.
My choice of cheese is Parmesan as I wanted to get some crust on the top, you can use other forms of cheese based on your likings. Mozzarella or Provolone cheese would give you a melting texture on top and a lot of folks love that as well.
This is a quick and easy one to prepare and can serve as both an Entree and an Appetizer.

Cuisine – Candian

Ingredients:
Some olive oil
1 Teaspoon of coriander powder
1 Teaspoon of cumin powder
4 Potatoes
Salt to taste
2 Bell peppers chopped into medium (green and red)
1 zucchini, sliced thin.
½ Teaspoon of black pepper corn.
½ Teaspoon of red chili/cayenne pepper powder
1 Onion diced into medium slices
Some fresh cilantro chopped small
Pepper powder to taste
Parmesan cheese

RECIPE :

Potato Boil -

1. Peel the potatoes and slice them thick and long.
2. Boil them in water and salt so that they are cooked, do not over boil them because we do not want them to start breaking apart.


Poutine
1. Take a pan/Skillet and pour some olive oil to it.
2. Add the coriander and cumin powder and mix them for ½ a minute with the oil.
3. Add the boiled potatoes in the pan and mix them together with the spice in a gentle manner making sure they do not break.
4. Now add some salt to taste, mix and take the potatoes out. Keep it aside.
5. Add the bell peppers and zucchini in the pan and sauté for 2 minutes.
6. Sprinkle the pepper corn and red chili powder and sauté for a minute.
7. Add the onions and sauté for 6-7 minutes, you let the onion get a little brownish while still maintaining a level of crunchiness to it.
8. Add the potatoes back in the pan, add some fresh cilantro on top, pepper powder to taste, some parmesan cheese. If like melts you can use Mozzarella or Provolone but I prefer this as I like the crust we get because of this cheese on the top of the dish. The quantity of cheese is also subjective, the more the merrier as it is always with cheeses.
9. Broil the pan in an oven for 7-8 minutes. Take it out and enjoy this lovely variation of Poutine with your family and friends.
