Tandoori Gobi Masala

Tandoori is always associated with meat, mostly Chicken and is regarded as a quintessential Indian Appetizer . I love eating Tandooris and I can probably eat them any time of the day. Tandoori gobi is a great alternate vegetarian option for tandoori chicken. Cauliflower is a little sturdier than most of the vegetables and hence can withstand the heat in a tandoor. It does get the necessary charred layer on the top whereas the florets gets softer when they get cooked making them a great alternate choice for chicken.
Gobi masala is a great Indian dish too. In fact, this was the first ever entrée that I cooked from scratch in my life. I was in my 9th standard when I decided to cook the dish. I followed the recipe I found in a cookbook which used be given as complimentary with the all famous Prestige Pressure Cooker. I still remember it was so tasty, It was back then I realized that I can cook and more importantly cooking is fun.

Tandoori Gobi Masala is a dish where I have combined Tandoori Gobi and Gobi Masala in a single plate as a solo dish. I am not entirely sure and you might find this dish in some restaurants too but mine is completely unique and I developed the recipe utilizing the basics of both the dishes. This can be made vegan if you do not use curd in the dish but that would make it a little more drier unless you substitute it with some coconut milk. Cuisine – Indian, Punjabi

Ingredients:
1 Cauliflower, take out small florets.
Some canola oil spray
2 Tablespoons of curd
1 Tablespoon of garam masala powder
1 Tablespoon of dried fenugreek leaves
1 Teaspoon of coriander powder
½ Teaspoon of cinnamon powder
Some mustard oil
1 Teaspoon of cumin seeds
1 Onion diced small
2 Tablespoons of ginger garlic paste
2.5 Tomatoes diced small
Salt to taste
1 Bowl of green peas

Marinade -
3 Tablespoons of hung curd or yogurt
1.5 Teaspoons of chat masala powder
4 Teaspoons of tikka or tandoori powder
½ Teaspoon of turmeric powder
1 Tablespoon of Kashmiri red chili powder

RECIPE :

Marinade

1. Take a big mixing bowl, add the cauliflower florets and the ingredients listed in the marinade section into it.
2. Whip them together nicely so that the ingredients are mixed consistently in the cauliflower florets.
3. Keep them aside for 30 minutes, I sometimes skip this step, but marination always helps with the taste.


Gobi Tandoori

1. Take a grill pan, spray some oil in it and bring it to heat on a stove.
2. Pour the cauliflower and grill them on medium for 12 minutes. Turn them around to ensure all the sides are equally cooked.
3. Turn off the stove when you start seeing slight chars on the cauliflower florets, keep them aside.

Tandoori masala
1. Pour 2 Tablespoons of curd, coriander powder, garam masala powder, cinnamon powder and dried fenugreek leaves in the same bowl used for the marinade. Whisk them together to form a thick paste which will be used for the sauce. Keep it aside.
2. Take a pan and pour some mustard oil in it, bring it to heat.
3. Add the cumin seeds and onions in it and sauté the mix until the onions turn into a golden-brown color.
4. Add the ginger garlic paste and sauté for 4 more minutes, stir occasionally so that they get mixed thoroughly.
5. Add the tomatoes, keep sauteing and let the tomatoes melt into the sauce.
6. Now add the spice mix from step 1 and mix them properly in medium flame.
7. Add Salt to taste, the grilled cauliflower florets, mix and sauté them together letting the sauce mix with the cauliflower.
8. Add ½ cup of water, 1 bowl of green peas, close the lid and cook for 15 minutes.
9. Open the lid and serve hot, the dish is ready.

You can garnish this using some cilantro leaves and serve it with some Pulao or any form of bread.
