Veggie Quinoa Biriyani

Biriyani is everyone’s favorite and one of the most talked about Indian/Middle Eastern dishes around the world. It has got a long rich history and has taken inspiration from everyplace it has reached. This is why there is no single recipe for Biriyani, the ones in Middle East is a lot milder than the ones served in the southern part of India. The Awadhi or Kolkata biriyani is more aromatic and is served with potatoes while the Sindhi and Hyderabadi biriyani are cooked in layers. Some biriyani’s also use coconut milk, coconut and different forms of rice instead of basmati like the Thalassery or the Thalapakattu biriyanis. There is Karachi biriyani which according to a local chef in my city uses tomatoes as the base in contrast to curd which is the base for Hyderabadi biriyanis. The sides served with biriyani has also been inspired by locales with chicken chaap, salaan , raita etc. being served along with the rice. The Indian adoption of Biriyani’s has given rise to a new version which is Vegetarian Biriyani. It is a meat free version of the Biriyani and uses a variety of vegetables including paneer to satisfy the Biriyani lust of all vegetarian folks. The recipe I am sharing here is a step ahead replacing rice with Quinoa and thus making it a healthier vegetarian version of the classic.
The recipe is simple and uses quinoa as the ain ingredient for the dish. I have not used curd in this dish as curd makes the quinoa mushy and hence should be avoided here. If you chose to use rice instead, you should use curd in the step marked with ***.
I have used a frozen pack of vegetables, you can use fresh ones as well. The choice of veggies is entirely upon you but refrain from using vegetables like Yellow squash which melts easily while pressure cooking. They would spoil the texture and consistency of your biriyani.

Cuisine – Indian

Ingredients:
5 Tablespoons of ghee (Clarified Butter)
1 lb of Paneer, cut into medium pieces
½ Green bell pepper thinly sliced
10 Mushrooms cut in small
1 Onion sliced long and thin
4 Cups of Quinoa, soak them in water
2 Ginger Pieces thinly chopped
4 Garlic pods
2 Green chili
Some mint finely chopped.
Freshly chopped cilantro/coriander leaves
Salt to taste

Whole spices –
2 Cardamom pods.
1 Big\black cardamom
1 Teaspoon of pepper corn
1 Teaspoon of cumin seeds
4 Cloves

Powdered Spices –
1.5 Teaspoon of turmeric powder
1 Teaspoon of red chili powder
1 Teaspoon of coriander powder
1 Teaspoon of garam masala powder

Veggies like corn, carrots, and beans chopped small. You can add your own favorites.

RECIPE :
1. Pour 3 spoons of Ghee in an Instant Pot and bring it to heat in sauté mode.
2. Add the onions and fry them until they turn golden brown in color
3. Add the spices mentioned in the whole spices and sauté them for a minute with the onions.
4. Add the veggies and sauté them for a minute, add then paneer cubes, bell peppers and mushrooms. Cook them for 5 minutes.
5. Add a tablespoon of Ghee on the veggies.
6. Take the veggies out and keep them aside.

7. Caramelize some onions into a dark brown color in a separate pan.


8. Take the chili, ginger and garlic in a blending jar and blend them into a coarse paste.

9. Add a tablespoon of ghee into the instant pot.
10. Add the ginger garlic chili paste and sauté them for 3 minutes.
11. Now add the spices listed under Powdered Spices, the mint leaves and sauté for 3 more minutes. ***
12. Add the cilantro leaves, add the quinoa and mix them together.
13. Add 6 cups of water in the pot, salt, add the veggies prepared before. Mix them and pressure cook for 7 minutes.
14. Let the pressure release by itself, open the lid and add the caramelized onions on top.
